Ikaria Cabbage Pomegranate Superfood Slaw

Cabbage is an important part of the longevity diet on Ikaria and one of the healthiest foods you can eat, rich in antioxidants and anti-inflammatory qualities. Ikarians cook it, of course, in several traditional ways, from braised to rolled in dolmades, but they also use cabbage as the winter salad staple, often tossed with dill and grated carrots. This recipe, with pomegranate seeds, pine nuts and herbs is my husband's creation and it has become an almost nightly addition to our dinner table. Pomegranates are another one of nature's superfoods, of course, too. Ikaria Cabbage Pomegranate Superfood Slaw

Ingredients

  • 4 cups finely shredded green cabbage or a combination of finely shredded red and green cabbage
  • 1/3 cup chopped fresh flat-leaf parsley
  • 1/3 cup chopped fresh dill
  • 2/3 cup pomegranate seeds
  • 3 tablespoons toasted pine nuts
  • 2 tablespoons toasted sunflower seeds

Dressing

Instructions

  • In a serving bowl, toss together the cabbage, parsley, dill, pomegranate seeds, pine nuts, and sunflower seeds.
  • For the dressing: In a small bowl, whisk together all the ingredients for the dressing.
  • Pour the dressing over the salad and toss. Serve immediately.
