Ingredients

Instructions

  • Preheat the oven to 375°F. Line a rimmed baking sheet with parchment paper.
  • Place one sheet of phyllo over the parchment, brush with olive oil, and place the other sheet on top. Brush that one with a little olive oil, too. Place a second baking sheet over the phyllo and bake for 15 to 20 minutes, or until golden and crisp. Remove the top sheet and let the phyllo cool.
  • Mix the spinach, scallions, dill, and feta together in a serving bowl. Toss with the remaining olive oil, salt, and pepper.
  • Break apart the phyllo into amorphous pieces and sprinkle over the salad. Serve.
