There are so many great Greek potato recipes, and this is definitely one of them. Antinaktes means “shaken,” and this classic Cypriot recipe is one of the greats of the Eastern Mediterranean and a great example of how potatoes are enjoyed in the Greek diet and Mediterranean diet alike. Indeed, potatoes are an essential Mediterranean diet ingredient and can be paired with the likes of fresh and dried Greek herbs, extra virgin Greek olive oil, and wine.

Smashed Cypriot Potatoes with Coriander and Red Wine – Patates Antinaktes

Ingredients

Instructions

  • Wash and dry potatoes well.
  • Take a heavy object like a stone or a meat pounder and hammer potatoes once or twice, each to break them open a little.
  • Heat olive oil in a large heavy pot. Add potatoes and sauté until lightly browned. Lower heat, cover pot, and cook the potatoes 5 to 7 minutes. Add wine, coriander seed, salt and pepper. Cover pot and cook over medium heat, shaking back and forth to further break up potatoes, but don’t remove the lid. Cook the potatoes until soft and fork tender. Serve hot!
