Smashed Chickpeas on Toast

Ingredients

  • 4 slices hearty bread Tuscan country bread, sourdough, or your favorite
  • Extra virgin olive oil
  • 1 15-ounce can chickpeas, drained and rinsed, or 1 2 cups pre-cooked chickpeas
  • 1 –2 garlic cloves minced
  • 1 –2 spring onions chopped
  • 1 ripe firm tomato, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon sweet paprika or red pepper flakes
  • Sea salt to taste
  • 1 – 2 tablespoons crumbled Greek feta for garnish, optional
  • Fresh parsley for garnish

Instructions

  • Toast the Bread: Drizzle olive oil on both sides of bread. Toast in a hot skillet until golden. Remove and set aside.
  • Prepare the Chickpeas: In the same skillet, add olive oil, chickpeas, garlic, onions, and tomato. Season with cumin, paprika or pepper flakes, and sea salt. Cook for 3–5 minutes.
  • Smash the Chickpeas: Turn off heat and gently mash chickpea mixture, leaving some texture.
  • Assemble: Spoon mixture onto toast. Garnish with parsley and feta, if desired, and drizzle generously with olive oil.
