Smashed Chickpea Toast is a popular, protein-packed Mediterranean diet meal that’s quick, versatile, and deeply satisfying. Perfect for breakfast, lunch, or a light dinner, and can be kept vegan or topped with eggs for extra protein.
Toast the Bread: Drizzle olive oil on both sides of bread. Toast in a hot skillet until golden. Remove and set aside.
Prepare the Chickpeas: In the same skillet, add olive oil, chickpeas, garlic, onions, and tomato. Season with cumin, paprika or pepper flakes, and sea salt. Cook for 3–5 minutes.
Smash the Chickpeas: Turn off heat and gently mash chickpea mixture, leaving some texture.
Assemble: Spoon mixture onto toast. Garnish with parsley and feta, if desired, and drizzle generously with olive oil.
