Hangover Eggs

Hangover Eggs are our family secret for the morning after a little too much alcohol! You can cook these even if you have a headache since all you need are a few simple ingredients and not much skill (!): eggs, olive oil, and feta cheese. Jokes aside, there are so many delicious Greek recipes for eggs, but perhaps none quite so satisfying as this one for Greek sunnyside up eggs with feta, aka Hangover Eggs. The secret is to cook them slowly and to spoon the hot Greek olive oil over the top of them while they fry.

Ingredients

  • cup extra virgin Greek olive oil
  • 2 - 4 eggs
  • cup crumbled Greek feta or 4 slices of Greek feta cut from a block
  • Sea salt and pepper to taste
  • Pink peppercorns to taste optional
  • 1 tablespoons chopped fresh parsley or other chopped fresh herb as desired and to taste

Instructions

  • Heat the olive oil in a nonstick, preferably cast iron, frying pan over medium - low heat.
  • Gently break the eggs into the oil, careful not to break the yolk. Cook over low heat and as soon as the egg whites start to set, sprinkle or place the feta over the whites. Spoon the hot oil in the pan over the eggs a little and cook slowly, covering for a minute or so, or covering and lifting the cover to monitor.
  • Cook the eggs to your desired consistency. Season to taste with salt and pepper. They’re best when the yolks are still soft enough so that bread dipped into them will be coated. Sprinkle some parsley or other chopped fresh herb and a pinch of pink peppercorns over the top before serving.
