Cucumber in a Jar Salad

Ingredients

  • 1 large English cucumber thinly sliced
  • 1/4 red onion thinly sliced
  • 2-3 tablespoons Greek yogurt chilled
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 1 garlic clove minced
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons fresh mint chopped
  • 2 tablespoons fresh parsley or cilantro chopped
  • Salt and black pepper to taste

Instructions

  • Slice the cucumber and red onion thinly and place them in a mason jar.
  • Add Greek yogurt, honey, lemon juice, minced garlic, red pepper flakes, chopped mint, and parsley into the jar. Season with salt and black pepper.
  • Seal the jar and shake vigorously until all ingredients are well mixed and the cucumber slices are coated in the dressing.
  • Chill in the refrigerator for 10-15 minutes before serving.
