Cheesy Broccoli Crisps

Ingredients

  • 3 small heads of broccoli cut into florets
  • 250 grams shredded halloumi cheese
  • Salt pepper, garlic powder to taste
  • For the Spicy Ranch Dip:
  • 1 cup Greek yogurt
  • 1 tablespoon hot sauce
  • 1 tablespoon lemon juice
  • 2 tablespoons mint
  • 1/2 teaspoon garlic powder
  • ½ teaspoon cumin
  • Pinch of cayenne pepper optional

Instructions

  • Preheat the oven to 420°F. Line a baking sheet with parchment paper.
  • Blanch broccoli florets in boiling water for a minute or two, then strain and transfer to a platter lined with paper towels.
  • Sprinkle the baking sheet with a thin layer of halloumi cheese. Arrange broccoli florets on top, leaving space to mash them. Smash gently using a small glass.
  • Sprinkle tops with salt, onion powder, and garlic powder. Bake for 25-30 minutes or until cheese is golden brown and broccoli is crispy.
  • Prepare the dip by whisking together yogurt, hot sauce, lemon juice, mint, garlic powder, cumin, and cayenne pepper (if using). Taste and adjust as needed.
