Baked Feta with Olive Oil and Honey

Ingredients

  • 7 –8 oz 200–225g block Greek feta cheese, patted dry
  • 1 –2 teaspoons extra virgin olive oil plus more for greasing the pan
  • 2 tablespoons honey plus more for drizzling
  • Freshly cracked black pepper or red chili flakes optional, for heat
  • 1 –2 teaspoons fresh thyme leaves or chopped fresh mint optional, for garnish
  • Crusty bread pita, or crackers, for serving
  • Instructions

Instructions

  • Prep the Oven & Feta: Preheat oven to 400°F (200°C). Pat feta dry with a paper towel. Lightly oil the bottom of a small baking dish or oven-safe pan and place the feta in the center.
  • Add Olive Oil: Drizzle 1–2 teaspoons of olive oil over the top and sides of the feta, ensuring it’s lightly coated.
  • Bake: Bake on the center rack for about 10 minutes, until warm and slightly softened but not melted.
  • Add Honey & Broil: Remove from oven. Set oven to broil. Drizzle honey and a little more olive oil over the top of the feta, covering the surface. Return to oven and broil for 2–5 minutes, watching closely, until the top is golden and caramelized.
  • Finish & Serve: Remove from oven. Drizzle with a bit more honey if desired. Sprinkle with fresh thyme or mint and a pinch of black pepper or chili flakes for a kick. Swish the cheese around so that it’s all melty. Serve immediately with crusty bread or pita.
