FUN FACT: Since antiquity, mountain tea has been considered a remedy for colds, aches, allergies, indigestion, respiratory issues and a boost for your immune system. All these claims proved to be true; an increasing number of researches confirm that mountain tea is packed with flavonoids and antioxidants, and lowers blood pressure as well. Recent studies at the University of Magdeburg argue that not only does Sideritis prevent and treat Alzheimer’s disease, it also forestalls osteoporosis.

Servings 1 litre
Prep Time 3 hours 10 minutes
Servings 1 litre

Ingredients

  • 4 cups boiling water
  • ½ cup mix of loose mountain tea and loose sage tea
  • 1 to 2 Tbsp raw Greek honey
  • Ice to serve
  • Fresh mint leaves to garnish
  • Slices of lemon optional

Instructions

  • Place the teas in a french press or other heat resistant container or flask.
  • Pour the boiling water over the teas and stir gently.
  • Allow the tea to steep until the water has cooled down. If using a french press, press down so the tea leaves remain at the bottom of the container and transfer the tea to another container. If you’re using a different type of container, pour the tea through a sieve or a paper filter to remove the tea.
  • Add the honey and stir until it dissolves.
  • Refrigerate the tea for 3 to 4 hours, until cold.
  • To serve, pour over ice and garnish with fresh mint leaves and lemon slices, if desired.
