Eggless Greek Chicken Meatballs

Ingredients

  • 1 lb 450 g ground chicken, turkey, or beef
  • ½ cup breadcrumbs
  • ½ cup grated Parmesan
  • ¼ cup milk
  • ½ cup sun-dried tomatoes drained if in oil, finely chopped
  • ¼ cup finely chopped onion
  • 2 cloves garlic minced
  • ¼ cup fresh mint finely chopped
  • 2 tablespoons fresh parsley or basil chopped
  • Zest of 1 lemon
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil plus more for frying, if needed

For serving:

  • Cut up some tomatoes cucumbers, and yogurt for serving, and pita bread.

Instructions

  • Preheat the oven to 400°F (200°C) if baking.
  • In a large bowl, combine all ingredients. Mix just until combined—do not overwork.
  • Form into 1.5-inch (4 cm) meatballs. Wet your hands to prevent sticking.
  • Bake: Place the meatballs in neat rows on a parchment-lined baking tray, drizzle or spray lightly with olive oil. Bake for 15–20 minutes, or until browned and cooked through.
  • Remove and let rest briefly before serving.

To Serve:

  • Pair with a Greek tomato-cucumber salad or tzatziki for a classic summer meal.
  • Serve over orzo, rice, or tucked in pita with greens and an extra squeeze of lemon.
