NOTE: People in the Eastern Mediterranean have been drinking fermented dairy products like kefir and labneh as refreshments in warm months for eons. They’ve also been enjoying tart, fermented yogurt forever and consider it one of the healthiest foods in the world. This garlic-free iteration of tzatziki, with its delicious and light cucumber and aromatic herbs, is a very refreshing drink, indeed. Cucumbers, after all, are almost all water. It also borders on being closer to a snack than a drink, so if you’re on the go and want something to sustain you for a few hours, this is a great drink to have on hand!

Drinkable Tzatziki

Ingredients

  • 1 medium cucumber preferably organic
  • 1 one-inch piece of ginger peeled and chopped
  • 4 Tbsp chopped fresh dill
  • 2 Tbsp chopped fresh mint
  • 1 cup unsweetened almond or coconut milk
  • 1 cup Greek yogurt
  • 1 Tbsp fresh strained lemon juice
  • 2 tsp Greek honey
  • Ice cubes as needed

Instructions

  • Wash and pat dry the cucumber. Trim off the ends and cut the cuke into chunks.
  • Place in the bowl of a smoothie blender or other powerful blender or processor. Add the chopped ginger, chopped herbs, coconut or almond milk, Greek yogurt, lemon juice and honey.
  • Pulse until everything is well blended and smooth.
  • Add ice cubes and continue to pulse until desired consistency is achieved.
