Pancakes are called tiganites in Greek, and have existed in one form or another since ancient times. There are many regional pancake recipes. This one is a hybrid, inspired by a recipe from Corfu for raisin-studded pancakes. The addition of Greek yogurt makes the pancakes tangy, silky. and fluffy.
