Saganaki, the classic Greek recipe for fried cheese, is a winner that everyone loves! It’s one of those Greek recipe served in almost every Greek restaurant in the world but also something people like to do at home.
2 3-or 4-inch by ½-inch thick squares of hard sheep’s milk cheese such as Greek kefalotyri
½cupall-purpose flourspread onto a flat plate
1small egglightly beaten and in a wide, shallow bowl

2lemon wedges
Instructions
In a nonstick frying pan over medium heat, melt the butter or heat the olive oil.
Dampen the cheese squares under the tap or in a bowl of water, then pat into the flour on each side.
Next, dip into the egg on both sides and then press back into the flour on both sides. Place one wedge at a time into the hot oil or butter, and fry on one side until golden brown. Turn with kitchen tongs to fry on the other side. Remove and serve with a lemon wedge.
